Man, I dunno, $2300 to have some generic heavy 105 bike with no company standing behind the frame seems like an awful lot. I paid $1999 for an Ultegra Roubaix and it has a warranty. I could take it apart and put it back together again if I really wanted to "build" a bike (which doesn't seem like it's even the least bit challenging, and I doubt it'd be for you either considering your mechanical experience).
I get wanting to build stuff, but I'm not sure this makes sense. Maybe if you already had spare 105 components and some rims sitting in a box from an old bike something like this would be a fun weekend project.
