I've gotten used to having cables under the bar tape - don't think I could go back. I have to say, though, you did an outstanding job wrapping. Looks great.

You've raised a good point with this old tape, it's so thin and needs to be wrapped very tight it wouldn't be suitable for wrapping over cables even with a grooved bar the cables would stand out a mile unlike thicker gel or cork that helps hide cables. Great for fixies/ track bikes though, the tape pallen uses is far more suitable.
