My knees have on occasion tapped the rear of my handlebars when sprinting. Hands in drops wrenching on bars, really going at it on the pedals, butt starts hovering off saddle, body drifts forward.
You'll learn the intricacies of your bike and fit in time. It'll become muscle memory where your body stops having interference.
I wouldn't necessarily advise you change anything about fit. Just work on experience and control.
