Thanks for comments everyone.
Since my last post here, I've had time to ride it a few times. My wife and I went for a 28 mile ride, as well as a couple of 5-6 mile rides around the 'neighborhood'. We seem to get along much better on this bike than we did on the Jack Taylor. I'm not sure of the reason, but have a couple of ideas on it.
The family took a three day trip to Portland, so I mounted a kid stoker kit to this bike to haul my four year old son. There was a small issue with the chainring on it(the kid cranks have a larger ring than the stokers). Therefor, they were spinning at different RPMs. The crank arms were hittting each other once in awhile, so I ended up getting a longer chain for the kid crankset. All is good now. My son loves riding the tandem with me, a bunch more than his trailer bike behind my MTB. He and I can get with the program on the 'Joe'.
One other issue: while riding around Portland, we stopped at one of the bike shops there to get the longer chain, and have the derailleur hanger checked for alignment. They found that the RD was just worn out(springs and pivots). I had brought an extra RD(Deore DX), and swapped it for the Deerhead. Shifts real good now, and doesn't make any noise.
I think the only other mechanical thing that I'll be looking into, will be servicing/bleeding the brakes. After about 160 miles, I really like this bike. It is a lot of fun ring 'two up', and so far, everyone in the family is enjoying this bike(even Mom). I Have been pondering the idea of fenders for it. I have a nice set of aluminum units for it, but they need to be painted, probably red. The only problem is... there are no holes in the fork crown to hang the fender from. I was going to see if a quill stem would fit in the steerer from the bottom, and then cut it up to use for a hanger(somehow).
Anyhow, here's a couple of pictures from the trip to PDX. I managed to forget to get any photos of the kids and I riding...
