Replacing old Suntour freewheel with new Shimano cassette?

I have a gorgeous old Schwinn Paramount I built up myself -- in the late 1980s -- with Suntour Superbe Pro components (in my opinion the finest stuff available at the time). The drivetrain uses a 7-speed Winner Pro ultra freewheel. I've kept her in great condition, but I really want to upgrade my wheels. I was wondering about the possibility of matching the old Accushift 7-speed spacing with new Shimano or Campy cassette-type hubs. So I'd like to remove two (if a new 9-speed cassette) or three (if a new 10-speed cassette) cogs from the Shimano/Campy cassette, and recenter and respace the remaining seven cogs to work with my Superbe Pro's indexed shifting.
I realize the new wheel might have a little more dish than I need, and there will be a bit of wasted space, but it seems that if I want to get new hubs and wheels for my old bike, I have few other options (aside from replacing the whole drivetrain, which I don't want to do).
