We have three little ones, a 5yr old, 3yr old, and 20 months. Both my wife and I try to work our schedules around each other so that one of us is always home with the children. It helps that I work per-diem for 2 different hospitals/clinics and choose the day(s) when I want to work. My wife is also a nursing coordinator for a local hospital and works 1 weekend a month.
95% of my riding is done on the weekends, and I'm usually out on the road by 630-7am. I usually try to squeeze in a ride mid-week, a routine 15-25 mile loop just to keep the legs loose but I always look forward to my weekend rides.

With our two oldest starting Kindergarten and Pre-K this Sept, I'll be able to add in an extra day or two of riding time during the week with the baby in tow.
