Shimano 600 pedal question

I traded a Centurion Sport DLX frame for some bars and these pedals:

I thought they were a "quill" style, but VB says they are a platform pedal. At the risk of (again) proving my noobieness, what is the difference? Will regular shoes work with these pedals, or are they designed for use with a special shoe?

Also, slight prying to remove the dust cap resulted in immediate aluminum malformation...they are very thin! Any tips on how to remove them without marring the cap? I assume slowly work around the cap with a razor knife or other thin blade, applying slight pressure...but if anyone knows a better trick I'm all ears.
