I guess that I shouldn't totally negate the difference but, realistically, it would be more cost-effective to get more seatpost than switch wheelsets (and probably brakes, if they could even be made to work) for that small of a difference.

Additionally, a good set of fat slicks on that 26 will close that gap to the (generally speaking) smaller tires that are run on a 700.
