+1 MTB are almost never worth the effort. That said I just picked up 2 free MTB (one TREK) and a MTB / Hybrid pair for $50. All four saddles are trashed and at least one needs new shifters.
The Raleigh and a couple of the other OP bikes will turn out nice and well worth it -- if you consider the project as the payoff.

While I'd never do that again, I learned enough about non-C&V brakes MTB gearing, non-compatible parts that look alike, I think it was worth the $25 or so I lost on the deal (I paid $75 for the Outlook). I also picked up a set of aluminum 26" wheels to swap into my '88 Raleigh MTB and enough Shimano GS200 parts to fill a good size box.
You are a good guy to salvage something from those, and I admire what I now realize it takes to get some good out of a pile of old bikes.
