Do NOT overtighten your headset unless you want to wear it out quicker! The only reason a bicycle can balance is because the front wheel automatically tends to turn in the direction a bike is leaning into. This has been shown with riderless bikes experiments. It is supposedly almost impossible for most people to balance and ride a bicycle when the steering is fixed/locked.

How old are you? If you want to check your basic balance try balancing on one foot. First with your eyes open and then with your eyes closed. As you age your balance gets affected. If you have an inherent balance problem then a camelback might be the solution rather than fighting with bottles.
