It's amazingly simple and awesome on fish tacos or any kind of grilled fish or chicken. It's even good just with tortilla chips as an appetizer or whatever. I prefer to use fresh pineapple but if you're lazy, you can use canned pineapple in a pinch*.

Take a fresh pineapple, skin it and cut it in half. Put the top of the pineapple on your cat's head and laugh at him. He loves that ****. Chop one half up into pieces that will fit into a blender and puree it (you may need to add a little water or - if you have it - pineapple juice to get it moving. Don't add too much!)

Throw in a large fresh jalapeno pepper or two - (you can adjust this to taste when making later batches) and a big ol' handful of fresh cilantro, stems and all (there is a lot of flavor in the stems). Don't use pickled jalapenos or dried cilantro.

Dice up the remaining half of the pineapple into very tiny pieces. You don't need to be careful and will most likely end up with some mush. That's okay. If there's a lot of juice, strain it out.

Mix the stuff from the blender with the pineapple you just mangled up in a big bowl and stir it up well. I like to chop up some more cilantro and throw it in so there's big leaves in there.

Chill and eat (it's better cold and takes the harshness out of the jalapeno if it hangs out for a while).

*If you use canned pineapple, just substitute two cans of crushed pineapple for the fresh stuff. Drain some of the juice out of one can, put it in the blender with a little of and throw in the pepper and cilantro. Drain the other can really well and mix it with the stuff from the blender.
