One problem I have is my favorite seat is no longer available. Zefal gel. I have done several
century's with no thought of the seat or affected areas. Going to have to find something
close. Also going with a double seat mount cage for the bottles.

No those aren't bullhorns. Someone posted a pic below, but if you search on "bullhorn" on the website you listed above, you'll get several other examples.

As for the saddle: look on ebay for that saddle. I've had VERY good luck finding my favorite and once-discontined (now back in production) saddle on ebay and managed to outfit all my bikes plus have one spare.... for pretty cheap.
