I'm a huge fan of building with velocity rims. They are straight from the get-go and true to a fraction of a mm with even spoke tension around the wheel. Velocity aeroheads would work fantastically for what you are doing. In 10 years when you have the wheelset, you will be happy you put an extra $25 into each rim.
