You don't need meat, you need protein. Tofu, seitan, whey. Stuff like that. Also, snacks for lunch after a hard ride in the morning is not good. You would be better off having the eggs for lunch and cereal in the morning. Protein after exercise helps build the muscles. I also suspect you are down on calories and potentially other nutrients.
More importantly, you need to learn to balance exercise with rest. I suggest that you get a good book on the subject.
