Did you decide which wheels you would take? I am not familiar with the Deep V but the Fulcrum Racing T is a stock wheel that came on the 2012 Cervelo bikes, The Shimano wheels are the stock wheels for the CAAD9. If you take the stock wheels definately offer less money.
I'd take the Fulcrums first...the Shimanos actually are actually decent training wheels (I use a set as a back up for training)

Fulcrum Racing 7s are good solid wheels

The Velocitys would be at the back of the pack for me...I couldn't bear having them if only for aesthetics
