Why do you find this surprising or "funny"? Since when did getting on a bike automatically make one into a saint? I don't know what's more ridiculous -- the thought that everyone on a bicycle is somehow a virtue or righteousness, or the expectation that they'll act in such a manner.
The only real way to deal with it is to be prepared for when it happens and react accordingly. Personally, I move toward the traffic side slightly and just let them get squeezed against the gutter. It also affords me space to move further out should I require it, which I wouldn't have on the other side.
