Even under ordinary circumstances, you can't accurately detect a diabetic's glucose levels without either monitoring strips or a CGM.
She also apparently didn't bother to tell anyone, including the ride leader, that she had a serious medical issue that can rapidly shut her down. This is not only inconsiderate (as it's freaking out the other riders), it's also very dangerous for her. E.g. someone might have assumed she was dehydrated and/or suffering from heat stroke, given her improper treatment, and put her in serious jeopardy.
While I do think the group can accomodate her, IMO she's going into this in a selfish and unwise manner. This condition is her responsibility, not the club's. As recommended above, someone at the club needs to politely talk to her about managing this better for everyone's benefit, including her own.
