I start on the left side, then when I reach the stem, I wrap around that, down the steer tube and continue taping along the top tube to protect it when locking up. I leave the right side of the bars un-wrapped (for street cred)
The benefit to this method is that the top tube is grippy for when you need to carry the bike. Not to mention that the padding on the stem is helpful for holding on with your crotch while you superman skid.
Downside is that things are unbalanced for no handed track stands. But I don't do those.
