I apologize before I finish typing. This will not make you happy.
I would recommend spending 3 years getting in shape and use your $2k to buy a road bike. Take your wallmart bike back. You are neither strong nor do you have the endurance for human powered flight.
The only thing in your favor is you are 140lbs. That's it.
You don"t need a PHD to look up who else has done human powered flight and see their level of fitness. Smart people build airplanes and rotorcraft...... spending large budgets, then they are smart enough to get a cycling beast to spun pedals.
You aren't that person they seek.....not yet. Dedicate a few years to building cycling strength and endurance, maybe you'll give up hpf and do something within your reach.
Maybe you'll wisen up and realize at 33 years old high school was a long time ago; it is time to move on.
With work you may be a fit 40 year old.... that seems like a rational objective.
.... tl:dr
You didn't go to college, you can't ride a bike strong, but now you want to be an aerospace engineer and a bicycle sprint racer?!?!
