Save the hubs from the original wheels. You may want to build them up at some point, assuming the bearing races are in good nick.
And save the spokes and nipples, you never know when you might need one that size in the future.
If they are not rusted out I save bent 700C steel rims for pre-mounting tubular tyres on - but I'm a hoarder and a cheap skate!
