I'm not quite sure I understand the "worry" part. Why would you need to adjust anything when changing the gearing? As for Garmin vs. Bont, assuming the Bontrager does interface correctly with the Garmin head, go for it if that's what strikes your fancy.
The wheel will be at a different position in the dropout, so it will not longer align with the sensor.
