If it were me:

If I had a favorite set by looks or ride quality, I would keep those. Assuming the remaining two sets are essentially comparable, when I listed the Fuji I would list both sets and give the buyer the option to pick one. Some people go gaga over certain sets.

The only down side I see is that some one may try to weasel both sets, to which you say no. If you don't want the potential hassle, I'd list with the lowest spoke wheels, as people seem to think that it matters.
