There is a saponin coating on quinoa which can cause a bitter taste. Some brands do a better job of washing it off. Some brands will have 'saponin free' on the package. Hot water works best to rinse it off at home. On the plus side studies suggest saponin can help in cholesterol lowering.

The saponin is quinoa’s natural protection against birds and insects so growers don't need to use insecticides.
