A shop that has a fitting machine would be a good start. Actually, most fittings are a good start, at least better than you have gotten so far.
The Salsa Vaya might be a good bike for you. I saw one at a shop here and was impressed with how light it seemed. It has disc brakes and is designed for general road riding.
