I'm not so much concerned about weight as I am comfort, reliability and durability.
As for a shop that does professional fittings, my problem is that anyone can claim to be a "professional bike fitter," but how do I know they know a damn thing other than what they read on teh interwebz?
A shop that has a fitting machine would be a good start. Actually, most fittings are a good start, at least better than you have gotten so far.
The Salsa Vaya might be a good bike for you. I saw one at a shop here and was impressed with how light it seemed. It has disc brakes and is designed for general road riding.
