As far as the saddle and bar wrap go...I say do what ever you like best in both looks and functionality. Also, when it comes time to adjust and install stuff Youtube can be a great resource. There are helpful videos by professional bike mechanics demonstrating how to install bar wrap, adjust cables, install a new chain, etc.
