$.02 is to not try and turn it into a LHT with a big set of panniers on the rear, bags piled high and another set of panniers on the front without first having some idea how much you actually need to carry. I'd start with one set of Ortlieb front rollers to be used front or rear then decide whether you want a front platform or lowriders.
