Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

I looked at the reviews and didn't see that mentioned. Where was the chain reported to hit, on top or under the chainstay? If the chain is too long or you ride in small-small and the chain gets a bit slack I suppose that's possible. Be sure to size the chain properly and use a rear derailleur with enough "wrap" capacity and you should be fine. A layer of clear tape on the chainstay will protect it in any event.
