you want mostly carbs when you ride. But... you can easily get protein.
Buy nonfat powdered milk, or use eggs or eggbeaters, or lowfat tofu. Any of them will work because they all have protein.
These bars barely qualify as recipes. You just take a sweetener ( use honey)
and a starch (like oatmeal) and a small amount of oil,a little protein, and dried fruits and nuts for flavor and texture.
It's easy. If you use oats, honey and milk or tofu, you don't need to cook.
Go easy on the fruits and nuts. If you have a favorite flavor, like vanilla or chocloate, get some in there.
