I have no experience with SRAM but that isn't quite accurate for Shimano STIs. For rear derailleur upshifting (larger to smaller cogs) you are right, you can only shift one cog at a time. However, for rear downshifting (smaller to larger cogs) you can sweep the inner paddle and shift three cogs in one motion.
