Beautiful bike!
I think black fenders and racks would be a good compliment. The Planet Bike Cascadia or SKS P35's would be nice, with a Tubus rear rack.

The build looks good. My only thought is that the bars are rotated too far back. Properly set up, the hoods/bar ramps should be closer to level. IMO you need a shorter stem and less setback on the seatpost (or simply slide the saddle forward a little). Other than that, awesome build.
