I've changed my mind by the way. Atebit go for it and get the DS with stem extender and new cables / lines. You will surely have the slickest upright-comfort-bike on the block. Keep the original stem though, as when you decide to craig'slist it, you'll have more luck moving it with the standard stem.

By the way, I would have thought the simple solution for the shop would be to just add an extra 10mm spacer under the stem and replace the flat bar with a XC riserbar. That would give you at least 30mm. Maybe JUST maybe you might get away without having to replace the cables etc.
