So, forgive my newbishness, but is there a reason my favourite Campagnolo parts (especially hubs) shouldn't go on this touring bike? I mean, I won't take the Campy stuff off my Colnago, but I can work on getting some more secondhand...
You can easily mix Campagnolo and other parts on these older friction shifting drivetrain. Just be sure that the hub provides a 126mm or 130mm width between the dropouts.

I'm building up two racing Treks, one from 1978 another from 1983. I'm using Shimano 600 for the shifters and Shimano XT M735 derailleurs. This provides a wide range of gearing options. Here is a 50, 40 & 28t Crankset with a 14-32 six speed freewheel on Campy high flange hubs. The 1978 TX900 will be used for credit-card touring in Italy this year.
