Soaked or sprouted beans. There are several beans that taste good when soaked and/or sprouted. E.g., soak dry chick peas overnight in water (could be lightly salted or could be a veg broth) and you can eat them without cooking the next day. Mung beans (they are small beans with green skins available in Indian and probably Chinese grocery stores) can be soaked and eaten or be sprouted by keeping damp and in contact with air. Couscous also cooks by leaving it covered for 10 minutes after pouring boiling liquid over it.
