I read about how good these are for you, so I bought a bag and cooked them, using just a bit of light salt and a quarter onion for seasoning. They're blander than the beans I make, though I chop up a big sausage link with the beans and throw it all in a crock pot. I don't think sausage would work with the lentils, though ham might. Make them into a dhal/dal. Chopped onions, green chillies, turmeric, cumin, garlic. Chopped fresh coriander or parsley to garnish. Serve with rice or bread. Often served in indian restaurants as a side dish, but makes a very tasty lunch on its own.
There's a red lentil and cabbage version that is one of my favourites, I'll post the recipe if you're interested.
