2 hard days of training, and then a recovery day is not going to lead to overtraining. It's called a weekend.

Typical week I'm doing 3 consecutive days, without a rest day or recovery ride.

And there is a benefit to doing "blocks" i.e. 2 consecutive days of intervals, instead of seperating them by a day. The second day really sucks, but it also can have good adaptive effects.

My previous coach loved to prescribe 2 consecutive days of intervals.
My current coach almost always has the 2 interval days sepereated by an endurance ride on wednesday. Somewhat a mattter of style, and perhaps leaning more to recovery, as I age.

You have to find what works for you.

Also there's the issue of what you're training for. If your training for a multi day race, or just a hard multiday tour, you better be able to do consecutive days.
