so if you allow me to recap:

1) On the ultegra 11hub I should be able to to fit a shimano 8 cassette
2) With the help of the correct j-tec device I should be able to get my Campy corus 8 dearailleur/ergo shifter to shift fine on the shimano cassette

Should I get a 9 or 10 or even 11 cassette in order to be able to interchange my teeth range?? (by readjusting the cable and limit screws)?
