Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

You need cables with the same end fittings you have now and if they are barrels (MTB type), that's what you have to buy.

The cable kit you linked to is for road brake levers and won't work.
