I remember reading that there is no reason our heart couldn't beat at 300+ bpm if it was told so. It is just that it just beats fast enough to get enough oxygen to the muscles that are working. If you use more muscles you will require more oxygen and reach higher HR faster/easier. As you switch into anaerobic metabolism your oxygen requirements stabilize and HR does not need to go up as fast .
