I'm selling my M3 to build my cross bike, so I can relate.

I'd say the best thing I've bought for my bike has been a set of Vittoria Open Corsa Evo CXIIs. They've lasted a long time, have given me virtually no flats, and ride REALLY well. I can't imagine getting more out of a set of tires.
