If I'm doing a flat ride I'll use a closer cassette (almost never happens) but I'd rather have huge jumps than grind up a hill. I'd use a triple but I'd rather deal with big jumps than have to use the front derailleur that much or give up electric shifting.
If you're a Di2 user and want the big range, you don't have much option, since there is no triple Di2. That isn't most people's situation, however. As for the FD, I've never really understood the dislike of shifting up-front. Shimano 105 and Ultegra triples shift just fine, in my experience.
