Any XT rear hub prior to the FH-M770 has 10x1.0 steel axle and 18x1/4" balls.

I think you're looking for 750,755,756,760,765 (XT series) or 570, 580, 585 (LX series), or anything older. Deore 530 and 590 are very similar to these XT and LX rear hubs.

Alex Adventurer are a good value rim for touring.

Your Alivio hub would probably make a good touring wheel too.
