the number of pre built wheels for rim brakes is definitely waning
but why do you want pre built wheels

get a nice set of hubs
if you get decent disc compatible hubs then your wheels are available for use on future disc equipped bikes
and get a decent rim brake compatible rim from mavic or sun or whomever
and have them laced together with nice spokes by a competent builder
