I don't think the OP is going to be touring in the middle of Monsoon season, nor off road touring on the muddy trails of the Northeast... for a general set of touring wheels that will be serviceable and durable
the Alivio hubs will work just fine. The OP has overhauled the hubs; they spin smooth, the freehub body's in good shape... so what's the problem?

Middle of the road components work just as well as the high dollar stuff when building a Touring bike...
