Carbon road bike seat post pannier questions

SO I have been riding in some different events that have caused me to have to carry more clothes and food/water than I have in the past. I am considering getting a rack that attaches to my seat post and cantilevers over the rear wheel and then attach either a dry bag or a zipper style pannier bag. Topeak makes some and I have seen another one but haven't really looked much yet. Do you have any comments as to what you like or don't like going this route? Pics of your and comments would be nice.

I have a pretty big saddle bag for my emergency gear and have been using a bag hanging off the front end of my bars but I need more space when I'm doing certain rides that force me to carry more gear due to being self supported, long distances, and climbing into tundra areas on big climbs.
