Carbs? Either you've been out of the automobile market for decades or like to work on really old cars. Also, didn't Chevy use Rochester carbs, not Holly?

BTW, the 10s STIs are probably the worst thing about your bike, not the RD. The 2.3mm cable pull is infuriatingly unreliable. It'd be a smarter move to get the levers first, and run the 105 RD off some Ergos and a Shiftmate.
I've never used 10-speed STIs but I do have 10-speed Shimano dt shifters on Retroshift levers so the cable pull is the same and they work perfectly. I've also used a Shiftmate to run a 10-speed Shimano cassette and a Ultegra RD with 10-speed Ergos and they also worked very well. No perceptible difference between the two systems.

I've heard good things about the Jtek and have a vision in the future of doing what you're doing - switching the Shimano group on one of my bikes to "mostly" Campy (it's an italian frame and is begging me to have Campy on it) with a Shiftmate to mate to Shimano Cassettes.
Do it. Shiftmates work extremely well and are relatively easy to install. There is no downside in my experience
