It should be very easy to find campgrounds around Lake Okanagan - I've camped in Kelowna before, and Osoyoos was just pure bliss.
There are also winery resorts all over the place if you feel like spoiling yourself. Mind you the climb from Vancouver to the Okanagan is pretty killer, so if you're going to leave Vancouver by bike, watch out.
