Any 700c fenders should work on there, you have a ton to choose from. Plastic fenders are super easy to mount, and cheaper than aluminum. I'm happy with the SKS chromoplastics that I've been running for a few years, they seem indestructible.

Have you considered North Road bars. You should be able to get these cheaper than moustache, and your wife might be more likely to find them pleasant.
