Question Want to buy a hybrid, not sure about the fitting

Want to buy a hybrid, not sure about the fitting
I'm getting back into biking and I narrowed my choice betwee two bikes (Trek FX 7.3 and Giant Escape 1). I chose this kind of hybrid because I want some kind of performance but with a relatively straigh posture, since I've had shoulder and forearms issues in the past years.

I tried both, they both feel pretty good, except that I feel I'm more leaned foward and have to put more weight on my arms with the Giant. The shop that sells the GIant says they could install me a higher or adjustable stem for free and that I would get a similar feeling that I get with the Trek. Both shops offer a complete 1 hour custom adjustment at no cost.

The Giant would cost me 100$ less and has pretty much the same components as the Trek, but it has a carbon fiber fork, which with Ergon grips (included in the price) would probably be good for my arms issues. So I would really prefer to go with this one...

BUT ! The thing that bothers me is that I can't really know how the Giant will really feel with the higher stem/bar. Is the seller at my bike shop right when he says that it's pretty much just a matter of doing a proper fitting and changing or adjusting the stem/bar and that I would be as comfortable on the Giant as I am on the Trek ?

I've included the geometry specs of both bikes. I'm 5'10", 32.5 inseam, 145 lbs, so I would go in the Medium (19") for Giant and 20" for the Trek.

Thank you!
