This evening, I was like "f this, let's just take it out for a ride". Oddly, the shifting is a lot nicer on the road. I found that if I tune the tension (on the stand) such that I get noisy overshift during upshift, I actually can barely hear it on the road. On the other, if I tune the tension to be noisy during downshift, I can still hear the noise on the road. Perhaps shifting under load actually masks some of the problems.
I hope I can find time tomorrow to take the bike out for a shake-down ride, and take picture to share. I will probably ride for a while and monitor the shifting. If the clickety-clack returns and drives me crazy, I will definitely ping you to get it rebuilt. Thanks again!

Will tape the ride side when I satisfied with the rear shifting. The frameset is one of my favorites. It is a late 90s Bianchi Reparto Corse with Dedacciai zero pipes (more or less equivalent Reynolds 853). The bike as it is now weighs 7.85 Kg. Not bad for a full steel frameset.
