Welcome to the forum. Good frame compromise for all around service, especially long saddle days, as it's 'relaxed.' Your suggested gearing ratios are just right for loaded touring. Those 32 spoke wheels are a bit light for a really heavy load, but if you aren't and don't pack the sink, should be fine. I'd go with 28 mm kevlar road tires for city riding, 32's for touring, or just the 32's. Go with 175 mm cranks.

FWIW, I always suggest adding aerobars for hand positions, head winds, and long hills. This from experience when touring on a DF with Profile Design Airstyke.
